Paleo Challenge Day 5!

Scallops are filled with healthy Omega-3’s and a full 1.5oz per protein block.  Besides, everything tastes better with a little bacon.  Here’s a quick meal that will look and taste like you slaved over it!

Ingredients:

 

  • 4.5 oz scallops –they are usually 1-1.5oz apiece (3P)
  • 2 strips of bacon from the deli
  • 12 asparagus spears, chopped into halves (1C)
  • 1.25 cups red bell pepper, sliced (1C)
  • 1 cup green beans (1C)
  • 1 teaspoon olive oil (3F)

Scallops

 

Preheat the oven to 350 degrees

Place all the veggies in a casserole dish, drizzle with the olive oil, and season with pepper

Place the veggies in the oven and cook for approx 20 min, stirring occasionally

Meanwhile, slice the bacon strips in half lengthwise and wrap around the scallops.  Secure them with a toothpick and cut off any extra.  Place them on a cookie sheet and bake for 10-15 min or until the scallops are firm.

Day Three of the Paleo Challenge.  Have you used your two hour window already?  We’ve had a ton of questions and are here to motivate the day with some tricks, hints and guidelines.

Alcoholic beverages:  Biggest issue with athletes sticking to the paleo or zone is this one.  For the next 27 days we ask that you lock the stash.  It’s 27 days of detox people, you can do it.  This means no Red Bridge and no wine.  If you feel the urge to drink, try cultivating some other habit or addiction like shopping or gambling.

Sugar:  This is an evil substance created by the devil in order to fatten up his disciples.  Seriously; no sugar, no honey and no substitutes = no excess insulin dumps.  Save your pancreas and reset your insulin receptors, whoot whoot. 

Dairy:  Imagine yourself running in a Paleolithic era meadow, peaceful and naked with the club your sweetheart got you at last full moon.  It’s spring and the bison are expecting calves soon.  You hide behind a bush and watch them graze.  As they relax and settle in to their chomping, you dash athletically and with determination you target the milky tit.  How does this story conclude in your imagination? Something sound wrong other then the fact that I used the word tit in this post?

Zone:  The Zone is not a requirement for this challenge.  However, if you are already doing Zone we recommend keeping it up for OPTIMAL RESULTS.

Entering:  If you haven’t already, get your pictures taken, get measured, , log your food (send or turn this in on Friday) and have an anti-inflammed month.

Eat your veggies at every meal and drink water.  It will make you hate food and feel amazing!

Day 1, My Little Paleo Pal’s!

I thought you would all love some fun idea’s for the beginning of your journey! It doesn’t have to be hard and tasteless! This recipe is so good, so please make it and enjoy it! I’ll be adding new ones along the way! Coach

Spagettiand meatballs 
Say “Ciao” to those cravings for pasta, in fact–you may never want to go back! 

Ingredients:

1 Spaghetti squash
1 Jar marinara/tomato sauce (look for low sodium and no sugar content–we like the Costco brand or Classico)
1 Package ground turkey
Spices galore (seriously folks, only your imagination can limit you)

Preparation:

Preheat your oven to 375 degrees.  Cut your spaghetti squash in half, scrape the seeds out and lay both halves in a cookie sheet or pyrex dish with approximately 1/2″ water in it.  Bake squash for 45 minutes, flipping it halfway.  When the squash is done, scrape it into a bowl and marvel at it’s fun, craziness–save for later.  Meanwhile, mix a bunch of fun spices into your ground turkey meat.  Think pepper, italian seasoning, onion, or red pepper flakes to name a few.  Measure out 1.5 oz, make into meatballs and place on baking sheet.  Bake meatballs approx 20 min (throw them in when your squash is about halfway done).

Empty your marinara in a saucepan to heat through, and spice it up with some fresh garlic, oregano, basil, or thyme.  Doctor it up.  When your meatballs are done, throw them into the marinara and let simmer.  Alright people!  Now you are ready to serve this up.
